Comparative Analysis of the Nutritional and Energetical Values of the Diets of the Peasants in Siberia and European Russia During the Late Imperial Period as Compared to Physiological Nutrition Standards of the Late 19th and Early 21st Century

 The article compares and analyzes data on the food and energy value of the diet of different groups of Siberian peasants (old-timers and immigrants) according to several statistical sources with diverging data. The quantitative and qualitative characteristics of nutrition concerning each separate group of peasants-Siberians are compared. Conclusion is made about the advantage of the system of nutrition of old-timers because of the more steady and rational energy level of the diet. A comparison of the food and energy value of the diet of Siberians with that of the peasants of Voronezh province resulted in a conclusion that the food of peasants in the European part of Russia had a lower nutrient and energy value as compared to the food of both old-timers and new-settled peasants in Western Siberia. Thus the social stratification of the village is shown by means of food estimation. The question of sufficiency of food for various groups of peasants is treated with the use of physiological and medical nutrition standards of the turn of the 19th–20th centuries in comparison to the contemporary standards. The conclusion is: the nutrition of Siberian peasants corresponded to the modern standards for the protein component, but in terms of other parameters (fats, carbohydrates) it was deficient, especially low in fat.
